Incredible food, the skillets are AMAZING! Really cool portlandia vibe. Great and friendly service. I'd recommend it to anyone. Must try Portland staple.

Food truck in a pod with 6 or so other food trucks.
Some covered seating.
Quick friendly service.
We had two prigo sandwiches to go.
Food came out within 15 minutes.
This is good stuff with lots of meaty bacon, a flavorful cooked egg and yummy bacon drippings.
Sadly there wasn't much, if any, of the smoked apple butter which would have been a nice counter to the huge meat.
The English muffin held up well to the fillings and bacon grease.
We tasted the available but not for sale smoked ketchup and liked it a lot.
We also bought, but haven't yet tasted, a jar of their homemade Creaux mustard.
All around a nice sandwich and not terribly overpriced at $8.50. -

Oredered the side of sausage and came out completely raw in the middle, took it back and they were quick to make another round....however, this also came out raw in the center AGAIN!! If your ordering the sausage be sure to check this first!!

Def on my top 10 brunches in Portland list and maybe one of the cheapest options, moving it closer to the top of the list than the bottom.
Camp fire themed brunch eats? pretty sure this is a first. for me, anyway.
dietary restrictions you say? I'm veg and they always have plenty of veg friendly options -- my favorite dish might be the potato skillet with local veggies and a poached egg.. coupled with a pint of something delicious from the beer cart next door.
also noticed they had several GF options for you anti-wheat peeps.
The staff (like it's afternoon/evening partner Saint Burrito) are also one of the friendliest in town. I've never gotten any tude and they even have a cart dog who I'm unashamedly in love with.
Feel like The Bivy is another one of those best kept Portland brunch secrets which I'm into since I've never had to wait for my food .. but...
I also want them to stick around so

Delicious and Fast breakfast sandwiches every weekend!
After months of eyeing every photo on their IG account I decided to give the camp-fired brunch food cart a go, and let me tell you, it was a great decision. I've been a handful of times and I have devoured everything I've ordered in record time.
To Order:]
The Ramona is their excellent grilled eggplant sandwich, and the Prigo includes Tillamook cheese, House smoked bacon, a seared egg, and apple butter. Both mentioned are excellent choices!
Do not skip their specials, savory and made to order!
